- 4 boneless, skinless chicken breasts
- 2 scrambled eggs
- 1 cup chopped Ritz biscuits or similar butter biscuits
- 1/2 cup butter cut into pieces
- 1/2 teaspoon garlic salt
- pepper to taste
Heat the oven to 375 degrees Fahrenheit. Lightly spray a 9″ x 13″ pot with nonstick cooking spray.
Place the crushed biscuits in a medium-sized shallow bowl. Place the eggs (scrambled) into another shallow, medium-sized bowl. Roll the chicken breast one at a time in the eggs, covering them well, then roll them in the biscuit crumbs, covering them well on all sides. In the baking dish, arrange the chicken breasts in a row. Cover the chicken evenly with butter.
Bake on the middle rack of the oven for 40-45 minutes or until the chicken is done and the base temperature has reached a safe low temperature of 165 degrees Fahrenheit.
