- 4 slices of bread I used white sliced bread
- 250 ml milk 1 cup
- 2 eggs
- 2 tablespoons of sugar
- 1 cinnamon stick
- 1/2 tablespoon of cinnamon powder for sprinkling
- 1 piece of lemon or orange peel I grate it because I like to see the tiny dots
- a knob of butter 25 gr
- honey or more sugar to taste
Pour the milk, cinnamon stick, sugar, and lemon or orange zest into a saucepan. Bring to a boil. Once it boils, remove it from the heat and cover it while it cools. I pour ice water in the sink and let cool slightly so the toast doesn’t shatter when wet. You can cook it the night before and keep it in the fridge to use for breakfast.
Beat two eggs and mix with already tempered milk (this is another difference compared to torrejas in that the egg does not mix with the milk). Place the slices of bread in a bowl and sprinkle with all the milk.
Preheat a pan with oil. At a reasonable temperature (not too high), fry the slices of bread in the milk they have absorbed. Make them in pairs and let them brown well on each side.
Place them on a plate and add honey or sugar if you prefer. Finally, sprinkle with powdered cinnamon.
