Bourbon and Dr. Pepper Baked Beans

Ingredients :

  • 1/2 cup brown sugar
  • 1 tablespoon ground paprika
  • 1 teaspoon dry mustard
  • 1/4 teaspoon cayenne pepper
  • 1 (12 fl oz) can caffeinate pepper-type soda (such as Dr. Pepper(R))
  • 3/4 cup ketchup
  • 1/4 cup Worcestershire sauce
  • 8 slices bacon
  • 1 large onion, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup bourbon
  • 2 (16 ounces) cans of baked beans with pork

Instructions:

Preheat the oven to 175 degrees Celsius.

Combine brown sugar, pepper, mustard, and cayenne pepper in a bowl. Stir in baking soda, ketchup, and Worcestershire sauce until the brown sugar dissolves.

Cut 4 slices of bacon into small strips. Cook and stir in a large Dutch oven over medium heat until almost crisp, 3 to 5 minutes. Remove the bacon grease and set it aside in a basin.

In a Dutch oven, incorporate the onion into the bacon fat; cook and stir until tender, 3-5 minutes. Add the garlic; cook and stir for 1 minute. Pour in the bourbon, stirring occasionally to scrape the golden bits from the bottom with a wooden spoon. Add the bacon slices again.

Fill the Dutch oven with the brown sugar mixture and roasted beans. Cook, stirring occasionally, until the beans are well cooked, about 15 minutes. Place the last four bacon slices on top of the beans.

Bake in the preheated oven, covered until beans are bubbling and sauce is syrupy for about 3 hours.
