Ingredients :
- 1 pound bulk pork sausage.
- 2 tablespoons butter.
- 1 large onion, chopped.
- 1 cup sliced fresh mushrooms.
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry.
- 12 large eggs.
- 2 cups 2% milk.
- 1 cup shredded Swiss cheese.
- 1 cup shredded sharp cheddar cheese.
- 1/4 teaspoon paprika.
Instructions:
Preheat the oven to 350 °. In a large skillet, cook the sausage over medium heat for 6 to 8 minutes until no longer pink and crumbly; Drain and place in a greased 13×9-inch pan. Frying pan.
In the same pan, heat the butter over medium heat. Add onion and mushrooms; cook and stir for 3 to 5 minutes or until tender. Stir in the spinach. Pour the vegetable mixture over the sausage.
In a large bowl, whisk eggs and milk until blended; Pour the egg mixture over the vegetables. Sprinkle with cheese and paprika. Bake without the lid for 30-35 minutes or until the center is firm and a thermometer inserted in the center reads 165 °. Let stand 10 minutes before serving.
