Ingredients :

  • 1 pound bulk pork sausage.
  • 2 tablespoons butter.
  • 1 large onion, chopped.
  • 1 cup sliced fresh mushrooms.
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry.
  • 12 large eggs.
  • 2 cups 2% milk.
  • 1 cup shredded Swiss cheese.
  • 1 cup shredded sharp cheddar cheese.
  • 1/4 teaspoon paprika.


Preheat the oven to 350 °. In a large skillet, cook the sausage over medium heat for 6 to 8 minutes until no longer pink and crumbly; Drain and place in a greased 13×9-inch pan. Frying pan.

In the same pan, heat the butter over medium heat. Add onion and mushrooms; cook and stir for 3 to 5 minutes or until tender. Stir in the spinach. Pour the vegetable mixture over the sausage.
