- ¾ cup white sugar
- ⅔ cup salted sweet cream butter, softened
- 2 cups all-purpose flour
- 2 tsp baking powder
- (2) large eggs
- 2 tsp lemon extract
INSTRUCTIONS:
Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
Beat sugar and butter in a bowl with an electric mixer until light and fluffy. Add and whisk the flour and baking powder in a separate bowl, then gradually beat with the creamy mixture until smooth. Beat the eggs one at a time in the butter and flour mixture until the dough is completely combined, then add the lemon extract. Then place small spoons of dough on a baking sheet.
Bake until cookies come back to the touch for 10-12 minutes in preheated oven.
To note:
For added flavor, you can add lemon frosting if you want, or even add lemon zest to make the lemon pop.
