- 1-1/2 c. Sugar,
- 2 Tbsp corn syrup,
- 1/4 c.water,
- 6 egg whites,
- tsp. Vanilla
In a heatproof bowl of an electric mixer, combine all the ingredients (except the vanilla) and place a bowl over a pot of boiling water.
Whisk the mixture until it warms to 160 degrees using a lollipop or instant thermometer.
Transfer the bowl to the blender and whisk on high speed until stiff, shiny peaks form (about 6 minutes).
Add the vanilla. Freeze the cake immediately.
